• 4 eggs
• 1/2 cup onion, chopped
• 400 gm chicken liver
• 1/3 cup green peas
• 1/2 cup carrots, chopped
• 1/2 cup beans, chopped
• 2-3 cloves of garlic, finely chopped
• 2 Tbsp green chillies-finely chopped
• 1/2 tsp black pepper, ground
• 1/3 cup tomatoes, chopped
• pinch of cumin seeds
• Pinch of coriander powder
• A sprig of Curry leaves
• 2 tbsp oil
• Melba toasts or fried rice to serve
• Salt to taste
Method
1. Whisk eggs in the bowl and chop the liver into small pieces and keep it aside.
2. Heat oil in a pan.
3. Add garlic, chopped onion and chillies. Fry them until the onion gets golden brown.
4. Add the carrots, peas and bean and fry them for 2 mins.
5. Sprinkle pepper and salt.
6. Add the curry leaves and liver cubes, then coriander powder and cumin.
7. Mix well and fry for 3 mins.
8. Meanwhile, heat oil in another pan and add the eggs slowly, whisk until it gets cooked.
9. Add the liver cubes, the cooked eggs, and the chopped tomatoes to the fried vegetables and cook for a minute.
10. Now Egg Liver Bhurji is ready to be served with toasts or fried rice.
